'Sage' is a perennial traditional medicinal and spice plant that grows as a robust subshrub up to 70 cm tall. Its leaves have a very aromatic scent and a spicy, slightly bitter flavor. It has a wide range of culinary uses and is a frequent ingredient in Mediterranean dishes.

Growing tips:

Sage is an undemanding herb that likes sunny locations sheltered from the wind.

In the fall, a dose of compost provides fresh plant nutrients. In winter, the frost-resistant sage is hardy to approximately -10°C, but additional protection with brushwood is advisable. In the spring, a heavy pruning encourages fresh growth.

The leaves can be harvested while they're still available. They're also great for drying; simply hang them upside down in a dry place.

Use:

The finely chopped leaves can be used to season meat, fish, and vegetable dishes. A fresh sage leaf is always included in the classic Italian dish "Saltimbocca alla Romana." Its healing properties are evident in teas, infusions, and oil, which can have antibacterial, disinfectant, antispasmodic, diuretic, and fungicidal effects.
