Apple muffins with raisins – A juicy treat for every occasion
These apple muffins with raisins are the perfect blend of fruity apples, sweet raisins, and a light and airy batter. A hint of vanilla and a creamy topping of sour cream and honey make these muffins an irresistible treat, perfect for breakfast or as a snack. With their juicy apples and aromatic topping, they're not only a visual highlight, but also a comforting, sweet treat for any moment!

Ingredients for about 30 pieces
120 g flour
20 g cornstarch
1 tsp baking powder
1 pinch of salt
125 g soft butter
100 g sugar
¼ tsp ground vanilla
2 eggs
100 g sour cream
For the topping:
2 apples
lemon juice
4 tsp raisins
100 g sour cream
3 – 4 tablespoons liquid honey
Here’s how to prepare it:
For the batter, sift the flour, cornstarch, baking powder, and a pinch of salt into a bowl. Beat the butter with a hand mixer on high until fluffy. Add the sugar and vanilla. Beat in the eggs one at a time. Beat in the flour mixture and the sour cream alternately at low speed.
Line a 24-hole muffin tin with paper baking cups and divide the batter between the holes. Bake on the middle rack for 30 to 35 minutes. Test with a toothpick or wooden skewer for doneness. If no batter sticks to the muffin, the muffin is done.
Meanwhile, peel, core, and slice the apples. Immediately drizzle with lemon juice and mix with raisins, honey, and sour cream. Then, arrange them on top of the cooled muffins.
