Make your own wild garlic butter – spicy spring spread with lemon & mustard

Wild garlic butter is a classic aromatic spring dish—perfect with fresh bread, grilled vegetables, or potatoes. This simple recipe combines spicy wild garlic with a subtle lemon flavor and a hint of mustard. Prepared in minutes and ideal for freezing, it keeps the taste of spring handy all year round.

Ingredients

250 g soft butter
150 g wild garlic
1 tsp Dijon mustard
1 tbsp lemon juice
Zest of an untreated lemon
Sea salt
Black pepper


How to prepare

Let the butter soften at room temperature.

Wash the wild garlic and pat dry or spin dry. Finely chop one-third of it and add it to the butter. Grind the remaining wild garlic through a herb mill and add it to the mixture. Then add the mustard, lemon juice, lemon zest, 2 pinches of salt, and black pepper, if desired, and mix well.

Tip
The wild garlic butter also freezes perfectly. To do so, fill portions into sealed molds, or roll them into rolls, wrap them in cling film, and freeze.
