Burrata with toasted bread and heirloom tomatoes – A Mediterranean taste experience

This simple yet incredibly flavorful recipe combines the freshness of heirloom tomatoes with the creaminess of burrata and the rustic charm of crispy, toasted ciabatta bread. A hint of garlic and high-quality olive oil perfectly rounds out the dish. Ideal for a light dinner or as a delicious appetizer that indulges all the senses!

Ingredients for 4-6 people

1 ciabatta bread, sliced ​​diagonally
60 ml extra virgin olive oil, plus some oil for drizzling
4 garlic cloves, halved lengthwise
750 g tomatoes, heirloom varieties in various colors and sizes
1 bag of burrata (approx. 315 g), alternatively buffalo mozzarella
Sea salt
Pepper, freshly ground

Kitchen helpers:
1 bread knife,
1 kitchen knife,
1 charcoal or gas grill or
1 grill pan for the stove, 1 pastry brush


Here’s how to prepare it:

Preheat your charcoal or gas grill to medium heat. Alternatively, heat the grill pan on the stovetop at medium heat.

Brush the ciabatta slices with olive oil on both sides. Place them on the hottest part of the grill or in a pan and toast for about 3 minutes, until the slices are golden brown and rust marks appear. Turn the bread over and toast for another 2-3 minutes, until the other side is also browned and crispy. Transfer to a plate and rub the top of each slice with a garlic clove.

Depending on their size, cut the tomatoes into halves or wedges. Arrange them on a serving platter with the cheese and bread. Season with salt and pepper and serve.

Drink recommendation:
To emphasize the contrast between the creamy burrata and the crispy toasted bread, we like to pour something with a lively character: Prosecco, Champagne, or other sparkling wines. A fresh white wine like Muscadet, Pinot Grigio, or a dry Riesling is also a good choice.
