Green pea soup with crème fraîche & croutons – creamy, light and full of flavor
This green pea soup is not only a real eye-catcher, but also a comforting, light dish full of freshness. With aromatic herbs, creamy crème fraîche, and crispy croutons, it's perfect as a starter or as a light main course. Ingredients for 4 people
1 onion
1 – 2 cloves of garlic
300 g potatoes (floury)
2 tbsp butter, 100 ml white wine
1 bay leaf
2 sprigs of thyme
approx. 1.2 l vegetable or chicken stock
450 g peas (frozen)
Salt, freshly ground black pepper
freshly grated nutmeg
Aside from that
2 slices of white bread or toast
2 tbsp butter
1 handful of pea shoots
2 – 3 stalks of red basil
100 g crème fraîche
preparation
Peel and finely dice the onion and garlic. Peel the potatoes and cut them into small cubes.
In a saucepan, melt the butter, then sauté the diced onion until translucent. Add the garlic and sauté briefly.
Pour in the white wine and let it simmer briefly. Add the potatoes, bay leaves, thyme, and vegetable stock.
Bring to a boil and cook covered for 10-15 minutes until the potatoes are tender.
Remove the bay leaves and thyme. Add the peas. Bring the soup to a boil, purée until smooth, and season with salt, pepper, and nutmeg.
For the croutons, cut the bread into small cubes. Melt the butter in a pan and toast the bread cubes until crispy on all sides. Season with salt and pepper and drain on kitchen paper.
Rinse the pea shoots and basil and pat dry. Tear the basil leaves into smaller pieces.
To serve, heat the soup, divide it among bowls, stir in some crème fraîche, and garnish with croutons, pea shoots, and basil.
