Pesto bread with cheese – savory yeast pastry with basil and Gouda

This aromatic pesto bread with cheese is the perfect accompaniment to soups, salads, or simply as a hearty snack. The fluffy yeast dough is spread with fresh basil pesto, artfully braided, and topped with Gouda cheese – a real eye-catcher and a treat for cheese lovers! Easy to prepare and wonderfully fragrant from the oven – ideal for brunch, picnics, or buffets.

Ingredients for 2 loaves

½ tsp sugar
160 ml lukewarm milk
300 g flour + a little more for the work surface
Salt
2 tbsp oil
50 g pine nuts
1 bunch of basil
1 garlic clove
50 g grated Parmesan cheese
80 ml olive oil
Pepper from the mill
100 g grated Gouda


How to prepare

Crumble the yeast, dissolve it in the milk with the sugar, and let it rest for 15 minutes until the yeast begins to foam. Combine the flour and 1 teaspoon of salt in a bowl, add the milk and oil. Knead everything with the dough hook of a hand mixer or in a food processor until you have a smooth dough. Form it into a ball, cover it in the bowl with a clean kitchen towel, and let it rise in a warm place for about 45 minutes, until it has significantly increased in volume.

Toast the pine nuts in a dry pan over medium heat. Wash the basil, shake dry, and pick the leaves. Peel and roughly chop the garlic. Purée the pine nuts, basil, garlic, Parmesan cheese, and olive oil in a tall mixing bowl with an immersion blender. Season the pesto with salt and pepper.

Preheat the oven to 180°C (160°C fan-assisted). Knead the dough again vigorously with your hands, then roll it out on a floured surface into a rectangle approximately 75×35 cm. Spread the dough with pesto and roll it up from the long side. Cut the roll in half lengthwise, twist the halves together, and carefully place it on a baking sheet lined with parchment paper. Sprinkle with Gouda cheese and bake in the oven on the middle rack for about 30 minutes.
