Plum cake with marzipan from the tray – moist, sweet & simply homemade
This sheet cake is a true late summer favorite: light yeast dough, juicy plums, and little pockets of creamy marzipan butter. Whether for Sunday coffee, a garden coffee table, or just on its own – this recipe brings classic cake charm to the baking sheet in a creative twist.

Ingredients for 10 pieces
220 g flour
15 g fresh yeast
40 g sugar
100 g soft butter
1 egg (size M)
100 ml lukewarm milk
Salt
500 g plums
75 g marzipan paste
1-2 tbsp granulated sugar
Here’s how to prepare it:
Knead the flour, yeast, sugar, 25g butter, egg, milk, and a pinch of salt thoroughly with the dough hook of a hand mixer for 5 minutes. Cover and let rise in a warm place for 40 minutes.
Meanwhile, wash and pit the plums. Place the dough on a greased baking sheet and, with floured hands, flatten it evenly into a large flatbread (approx. 35 x 25 cm). Let it rise for another 20 minutes.
Coarsely grate or chop the marzipan. Whisk the marzipan and 75g butter until very creamy and fill a piping bag fitted with a medium-sized nozzle. Make dents in the dough close together and pipe the marzipan butter into them. Arrange the plums on top. Bake in a preheated oven at 200°C (180°C fan-assisted oven) on the second rack from the bottom for 20-25 minutes. Sprinkle with sugar.
