Princess cakes with raspberries and cream cheese – tender, fruity and no baking required
These little cakes are a sweet pink dream—perfect for birthdays, tea parties, or simply to treat yourself royally. A delicate butter cookie base meets a creamy cream cheese and yogurt filling with fruity raspberries and a hint of lemon. The decorative sugar adds a glittering final touch—perfect for little (and big) princesses. And the best part: They're completely no-bake and can be prepared in a snap!

Zutaten:
Floor:
- 55 g butter biscuits
- 40 g butter
Filling:
- 150 g cream cheese
- 80 g yogurt
- 2 tbsp lemon juice
- 80 g raspberries, frozen or fresh
- 25 g sugar
- 1 sachet (15 g) Gelatine Fix (Dr. Oetker)
Decoration: decorative sugar
Preparation: 30 minutes
Cooling time: 4 hours
Here’s how to prepare it:
Place the biscuits in a freezer bag and crush them finely with a rolling pin. Melt the butter in a saucepan and mix with the crumbs. Divide the mixture between the biscuits and press them down firmly with the biscuit stamp.
Blend the cream cheese with yogurt and lemon juice until smooth. Puree the raspberries and mix with the cream cheese along with the sugar. Gradually add the gelatin fix while stirring.
Pour the raspberry cream into the dessert rings and place in the refrigerator for at least 4 hours.
Carefully remove the tartlets from the dessert rings and sprinkle with decorative sugar just before serving.
Tip:Well-stocked supermarkets carry decorative sugar in shades of pink, which makes the cake look even more delicate.
