Moist carrot cake with cream cheese frosting – the classic rediscovered!

Ingredients

For the cake
500 g carrots
1 – 2 tbsp grated peel of an untreated orange
100 g flour, 250 g sugar
200 g ground hazelnuts, 200 g ground almonds
1 tsp baking powder, 3 tbsp lemon juice
8 eggs, 50 ml oil, 1 pinch of salt

For the topping
100 g powdered sugar, 100 g butter
175 g cream cheese, pulp of 1 vanilla pod

For the marzipan carrots
100 g marzipan paste, 25 g icing sugar
Food coloring in green, yellow and red

 


How to prepare

Preheat the oven to 175 degrees and grease the tin (26 cm diameter)
and sprinkle with flour and breadcrumbs.
