Summery flower bread – decorative sourdough bread with edible flowers

This summery blossom bread is not only an eye-catcher, but also a delight for anyone who loves natural baking. Sourdough, spelt flour, and a colorful mix of edible flowers create a fragrant loaf that's perfect for picnics, garden parties, or brunches. The delicate blossoms add not only color but also a delicate aroma—ideal for special occasions or as a thoughtful gift from the kitchen.

Ingredients

100 g sourdough starter
400 ml lukewarm water
600 g flour (light spelt or wheat flour)
+ a little more for dusting
15 g salt
4 tbsp dried, edible flowers
5 g potato starch


preparation

First, prepare a sourdough starter according to the instructions. Then, add 2 tablespoons of dried flowers to the dough and fold and stretch them in several times. Let the bread dough rise for about 8–12 hours.

After the resting time, carefully remove the dough from the bowl using the spatula and roll it out on a lightly floured surface into a rope about 40 cm long.

Place a cup open-side down on a floured baking sheet and gently wrap the dough around the cup, forming a circle. Join the two ends together by gently intertwining them and gently pressing to seal.

Cover the bread again with a dry kitchen towel and let it rest for another 30–40 minutes. Meanwhile, preheat the oven to 230ºC (top/bottom heat).

As soon as the oven reaches the right temperature, quickly transfer the bread to the oven. Bake for about 35–45 minutes, until it turns a golden brown and looks nice and crispy on the outside.

Meanwhile, heat 50 ml of water in a small saucepan. Add the starch, mix thoroughly, and bring the mixture to a boil while stirring constantly.

Immediately brush the baked bread with the starch mixture and sprinkle the remaining edible summer blossoms on top. The starch acts as an edible glue, ensuring the blossoms stick to the bread.

Be sure to let the bread cool down a bit before cutting it.
