Spaghetti alla Puttanesca – A Mediterranean pasta dish with tomatoes, olives and capers

Spaghetti alla Puttanesca is a classic Italian dish that captivates with its intense flavors. With ripe tomatoes, spicy olives, capers, and fresh herbs like basil and parsley, this dish is a true explosion of flavor. Spaghetti alla Puttanesca – Ein mediterranes Pasta-Gericht mit Tomaten, Oliven und Kapern

Ingredients for 2 people

750 g ripe tomatoes
2 tbsp red or yellow
onions, chopped
15 g fresh basil leaves, roughly torn
¼ tsp salt
45 g Mediterranean black olives, pitted and chopped
2 tbsp capers, washed and chopped
2 tbsp fresh flat-leaf parsley, finely chopped, plus parsley for garnish
250g spaghetti
1½ tbsp extra virgin olive oil
Freshly grated Parmesan cheese


Here’s how to prepare it:

Halve, deseed, and roughly chop the tomatoes. Bring to a boil in a saucepan over medium heat along with the onions, half the basil, and the salt. Then reduce the heat. Simmer uncovered for 20 minutes, stirring regularly to prevent the tomatoes from burning. Add the olives, capers, and parsley and simmer for about 1 minute. The sauce should now be thick. If it's still watery, simmer for another 5 minutes, then season to taste. Remove the pan from the heat and let the sauce cool slightly. Season to taste.

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Stir occasionally.

Just before the pasta is done, reheat the sauce and then remove from the heat. Stir in the remaining basil and butter or olive oil. Drain the spaghetti water and transfer the pasta to a shallow bowl. Add the sauce and toss with the pasta. Garnish with parsley and serve, along with the Parmesan cheese.
