This plum jam brings a special flavor to the table! The sweet fruits combine with the spice of rosemary and the deep flavor of port wine, making this jam an exceptional delicacy. Ideal as a gift from the kitchen or for your own enjoyment on fresh bread or in desserts – this delicious combination makes any breakfast or small treat a highlight!

Ingredients for 6 glasses of 250 ml each
2 kg plums
1 vanilla pod
3 sprigs of rosemary
250 ml port wine
200 g brown sugar
also: 6 twist-off jars of 250 ml each
Here’s how to prepare it:
Wash, pit, and roughly dice the plums. Split the vanilla pod lengthwise and scrape out the seeds. Finely chop the rosemary needles. Place the plums, vanilla seeds and pod, port wine, sugar, and rosemary in a large saucepan. Stir thoroughly and let stand for about 1 hour.
Bring the plums to a boil briefly and simmer uncovered over low heat for about 2 hours, stirring occasionally. Stir frequently toward the end to prevent the puree from burning.
Meanwhile, rinse the jars with hot water and dry thoroughly. Remove the vanilla pod and puree the jam with a hand blender. Immediately pour into the prepared jars. Close the lids tightly and turn the jars upside down for 5 minutes. Turn them upside down and let them cool.
