Mini strawberry tarts with oat crunch – sweet, crispy, simply summery
Small but full of flavor: These mini strawberry tarts are the perfect summer snack with coffee, for a picnic, or your next garden party. A crispy crust, a sweet oat crunch, and fresh strawberries—that's all you need for a little piece of happiness. And the best part: They not only look pretty, but are also incredibly easy to prepare.

Ingredients for about 10 tartlets
For the butter shortcrust pastry
100 g powdered sugar
200 g butter
300 g flour type 550
1 pinch of salt
1/2 vanilla pod
zest of 1/2 lemon
How to prepare
Mix together butter, sugar and spices. Add the flour
Knead quickly so the dough doesn't get warm. Roll out the shortcrust pastry to about 4 mm, cut out shapes, and place into small tartlet molds. Bake at 180°C for about 30 minutes. Once cooled, spread with strawberry jam. Place a Viennese base (see Strawberry Cake recipe) in the center and fill with vanilla cream (see Strawberry Cake recipe). Top with fresh strawberries and glaze with glaze. Garnish the edges with sliced, toasted almonds.
