Honey cake according to an old recipe – moist, spicy & perfect for the Christmas season
Honey cake is a true classic, with its moist texture and warm spices, perfect for the cold season. The combination of honey, cloves, ginger, and a hint of pepper allows it to develop its full flavor over time. It tastes especially good when allowed to rest for a few days before serving—best served with a little butter. A simple recipe for anyone who loves the taste of tradition!

Ingredients for 4 cans
5 eggs
300 g sugar
300 g honey
¼ tsp baking powder
¼ tsp clove powder
¼ tsp ground pepper
¼ tsp ginger powder
360 g wheat flour
Here’s how to prepare it:
Grease the baking pans with butter. If necessary, cut a piece of baking paper to the appropriate size and line the bottom of the pans with it.
Preheat the oven to 150°C. Beat the eggs and sugar until frothy, ideally for 20–30 minutes. Then gently fold in the honey. Mix all the dry ingredients and fold into the batter. Fill the pans two-thirds full with batter, as the honey cake will rise considerably.
Bake for 1–1.5 hours on the lowest rack in a preheated oven. If baking in cans as shown, the cake will need to bake longer, just over 1.5 hours. If the cake is getting too dark, cover with aluminum foil. Let it cool in the pan to keep it moist.
Wrapped in baking paper or cling film, the cake will keep for several weeks if stored in a cool place.
